Cooking in Quarantine

Posted on May 1, 2020July 19, 2021 by Joe Del Rocco

The stores have no yeast, flour, or baking sheets…

It seems we’re all cooking more these days. Here are some of the meals we put together.

Kung Pao chicken
Pineapple sweet ‘n sour chicken
Spicy tofu, mushroom, and lotus dry-pot
Lemon parsley chicken and potatoes
Callos a la MadrileƱa (my dad made this)
Clam chowder in homemade bread bowls
Eggs Benedict
Goat cheese stuffed dates wrapped w/ prosciutto
Bangers and Mash
Grilled Kielbasa
Grilled everything…
Le hotte dogs!

My wife has been baking a lot of fresh bread lately:

We also tried (unsuccessfully) to make great pizza on the grill and in the oven:

My in-laws (and my wife) are always making Chinese dumplings (steamed and/or fried):

My son helped us make egg tarts for dessert:

And here is my Italian escarole soup:

Some other meals not depicted: tuna casserole, pesto chicken, lamb kabobs, tacos, chili, various noodle soups, avgolemono soup, corned beef and cabbage, etc.
